The Catuai Washed process of Lot #28L reveals a vibrant and clean profile, characterized by notes of citrus, bright acidity, and a smooth finish. This meticulous washed process involves carefully pulping the cherries and fermenting them to remove the mucilage, followed by thorough washing and drying.
