Our second exploration into Buesaco South Colombia this time we delve even further into the regions tradition for extended fermentation. The days pickings are brought to the farmstead and immediately de-pulped, typically in the evening the beans are only fermented for 24 hours to allow the next pickings to take its place in the holding tanks.
Ulpian Rodriguez the Don of the family farm lets the dry fermentation continue for another full 12 hours to allow the beans to homogenize and allow sweetness to develop.
We are excited to introduce Don Ulpian Rodriguez who has been committed to producing excellent coffee for the past four short years since he founded the farm. A remarkable effort to get such a high quality product out in such a short amount of time.
