At the center of this operation is the Ilomba Factory, a community-driven processing station founded in 2007. This facility has transformed how coffee is handled in the region, allowing farmers to fully wash their coffee—a process that brings out bright, clean, and complex flavors. Each cherry is handpicked at peak ripeness, carefully sorted, pulped, and then fermented in fresh mountain water to develop clarity and depth. After 14 days of drying on raised beds, the result is a beautifully structured coffee bursting with flavor.
